So the Super Bowl memes have been killer since Sunday. Especially the super bowl memes involving the halftime show. Like most folks my age, I absolutely loved the halftime show. It brought me straight back to the late 90s-l and early 2000s. Consequently, I decided to compile some of my favorite memes from the Super Bowl. Your welcome.
It is me or has grocery shopping become a super painful experience? Now mind you, I don’t actually go to the store and shop, but the prices in my Shipt and store apps continue to go up. Last summer, a gallon of milk was $2.49. Now that same gallon of milk is $3.99, which adds up when you’re going through more than seven gallons in a week.
Fortunately, I don’t do a lot of driving, so I haven’t experienced much pain at the pump. My hubby, who had been driving to Miami for work, experienced the misery at the pump in full force. Between the increase in costs of food and fuel, I feel like my mortgage will soon be my cheapest bill. Thankfully, the butcher box prices haven’t gone up yet.
Anyway, when I was lamenting the pain off grocery shopping today, I was killing it at work. Today was one of those days that you don’t want to step away from the phone because every call is going you way. Those days don’t happen early, so I was all about that life today. I did, however, take a short lunch break to get in my run. Fortunately, the break in the action didn’t muck up the mojo. Of course, the highlight of the day was getting our weekly call from Jake. Here’s hoping tomorrow is just as good!
So after a bit of a hellish, I spent yesterday evening getting a very relaxing massage. It was just what the doctor ordered. Last night I had a new masseuse, who unsurprisingly was shocked at how tight my leg muscles are. I’ve heard that from every masseuse I’ve ever used and I swear I do stretch. Of course, the rest of my muscles were also super tight and I’m feeling it today. I had no idea you could get knots in your muscles over your ribs. Ouch!
My legs were pretty sore today, from both the massage and leg day, which made my run quite arduous. I also haven’t eaten much over the past few days on account of an questionable stomach. This definitely didn’t help make my run any easier. As I finished my run, I saw my masseuse’s face telling me to stretch more, so I did spend some time stretching during my phone calls. I’m loving my new wireless headset.
Speaking of relaxing, I haven’t been great at sticking to a good yoga practice. I definitely need it, but by the time I can actually practice I’m way too tired. Hopefully, I can get myself back into a regular routine of yoga and massages. If the way my muscles feel today is any indication, I need to be getting massages regularly or maybe every other day.
It’s a new day and a new month. Today was a much better day in the office. I cleared 10K easy despite working an hour less. Coincidentally, that’s exactly the kind of day you hope for. It’s still our busy season, but this year’s OEP seems to be less busy than last year. Nevertheless, I’m primed for success and have great support from my leadership.
Naturally, the key to my success is my fabulous sales assistants. They were well behaved today , which is always a bonus. I love having them by my side as I work all day. In fact, they’re really a great selling tool. People don’t always like sales calls, but most people love animals. My puppies are pretty quiet, but when they do bark my clients love it. This opens up the door for them to talk about their furry kids. Happiness is sharing cute animal stories with your clients as they buy from you.
Speaking of a new day, I officially started the Calibrate program this afternoon. It’s a metabolic reset program that led by a MD and coaches. My endo encouraged me to give the program a try to help take off the remaining thyroid weight and normalize my cholesterol numbers. So far the hardest part has been having to give up the Splenda in my morning coffee. They start the program gradually as it promotes success. If you make too many dramatic changes immediately, it makes it hard to sustain.
So today’s bloganuary prompt is all about strength today. The old adage that what doesn’t kill you makes you stronger is honestly played out. I mean after the last two years, so we even need to test that axiom anymore? Also, if axiom is true, then I’m a fucking Ironman after the last six months I’ve endured. At this point, I’d like to put down the spinach cans and relax a little bit. I don’t need to be flexing my strength like Popeye every day.
From a physical standpoint, I could use some more strength. After a week off, I went back to the BBG workout this week. Honestly, it felt so good to be back at it. If you’re looking for an exercise regimen that balances strength, cardio and stretching, you should definitely check it out. Today was my first day running after a couple of weeks. Unfortunately, this run didn’t no go super well. I was definitely sucking wind after only a few minutes on the treadmill. If only our emotional/mental trials, could make us faster and fitter.
Today at work was good. It sometimes all my strength and self-discipline to not be rude to some of these clients. I had a couple today that were quite special. Thankfully, it’s nothing like the awful clientele I would come across at my precious jobs. Nonetheless, they’re still quite annoying. Inspire of those special folks, I still had an awesome day on the phones. Sales is all about perseverance and resiliency. You can’t let one back call or one bad client derail you day.
We had a busy weekend at the rink. Goalielocks had two games yesterday in Coral Springs, while the Mayor had games in Palm Beach today. Unfortunately, the way our schedule worked out there wasn’t enough time to go home between games either day. Moreover, we didn’t even have time to leave the rink for lunch either day. Honestly, it makes for a really long day.
Goalielocks and the Toros dropped their two games yesterday. It’s so hard to play U18AA with a really short bench. Nonetheless, Goalielocks and his goalie partner both played phenomenally. The first game was pretty nasty. The Clearwater team was super dirty. In fact, one of their kids got tossed from the game for a terrible knee to knee hit on one of our players.
Today’s games were a little stressful. The Mayor’s team really needed to win both to have a chance at states. The first game versus the Makos was pretty tight. The Mayor got the game winning goal in the second period. His goalie came up with some huge saves to keep the Makos to one goal. Late in the third, the boys added an empty netter, which was a nice insurance goal. The final score on that contest was 3-1.
The second game they won 4-0 with goals from four different players. Including a beautiful short handed goal from the PK1 line. Honestly, that goal really took the wind out of the other team’s sails. Both games were a lot of fun to watch even if the first game was pretty stressful. The Mayor’s team has four more games left and they really need to wrack up the wins.
While we were at the rink, the temperature dropped considerably. It was in the 50s when we drove home. In fact, we’re under a frost warning. Or as I like to call it, a falling iguana warning. We don’t get many days that are this cool, so I’ll enjoy the lack of heat and humidity for the next day or so. And then we’ll get back to the normal heat and humidity. As for the rest of the night, we’re winding down our busy weekend with some NHL hockey.
It was a long drive back from South Carolina to Florida last night, but we made it home safely. Fortunately, our drive was a happy one. The Mayor and his team won the championship Monday morning. Excitingly, the Mayor had a hat-trick in the championship game. He was on fire, to put it mildly. Speaking of fire, his goalies had an awesome weekend and earned the team the number one seed.
The problem with most tournaments is that the skill level in the brackets is all over the place. There’s usually a team that gets blown out every game and a team that blows everyone else out. Thankfully, this was not the case this weekend. There was a lot of parity in the U16 bracket. In fact, at the end of the round robin all four teams were tied in points. We had the lowest goals allowed, so we got the number one seed.
After the game we headed back to the hotel, so the Mayor could shower before we started our drive. Obviously, we didn’t want to hit the road with a stinky hockey player. Once he showered, we headed to Ihop for a quick lunch. Ihop definitely hit the spot. We finally hit the road just before 2:00 pm. As we headed out of Charleston, I uploaded and edited the pictures I had taken over the weekend. Thanks to my hotspot, I was able to upload the pics to Shutterfly and share with the team before we left South Carolina.
The drive home was pretty uneventful except for a major accident of the north side I95 in Georgia. Traffic on the southbound side didn’t slow too much despite the helicopter landing on the other side of the interstate. Its never gold to see the helicopter. Hopefully, everyone involved will be okay.
We broke up our long drive with a stop at Buc-ees in St. Augustine. For the uninitiated, Buc-ees is a chain of gas stations and convenience stores that are very large in scale. The chain is from Texas and it lives up to the reputation that everything is bigger in Texas. At the Saint Augustine location, there are 104 had pumps. The amount of food, drinks and random things sold at the store was overwhelming. However, I would highly recommend the chopped brisket sandwich. It was really good.
I have loved Swiss cake rolls since elementary school, but I never thought of baking my own. After all, Little Debbie did a hell of a job with the tasty treat. And then I saw them bake a Swiss cake roll on the Great British Bakeoff. Consequently, I knew I had to give it a try. Yesterday I baked one for the first time and it was delicious, so I thought I’d share the recipe tonight.
Line a standard 11”x17” jelly-roll pan (rimmed baking sheet) with parchment paper; spray paper generously with nonstick baking spray. Do not skip the nonstick baking spray. Set pan aside.
Using an electric mixer, beat the eggs and vanilla together on high speed for 4-5 minutes, or until mixture turns foamy and lemon yellow in color.
Add sugar to the bowl in (3) separate ¼-cup additions, mixing for 1 full minute after each addition.
Add oil and mix until well combined.
In a separate bowl, combine flour, cocoa powder, baking powder and salt. Fold flour mixture into the egg mixture until just combined.
Pour batter into prepared baking pan. (Tip: Spread batter evenly to edges using an offset spatula.) Tap pan on counter several times to remove air bubbles.
Bake for 10-12 minutes, or until cake springs back when touched in center. While cake is baking, lay a large, thin kitchen cloth on counter. Sprinkle cocoa powder generously on top of cloth.
Once baked, immediately flip hot cake out onto the cocoa-dusted cloth. Remove and discard parchment paper. Starting with a short end of the cake, roll up cake (and cloth). Let rolled cake cool completely (2 hours) before continuing.
For the filling:
Using a medium mixing bowl, add whipping cream, sugar and vanilla extract. Beat with an electric mixer for 3-4 minutes, or until stiff peaks form.
Carefully unroll cake and spread frosting evenly on top of cake. (Tip: Make sure to frost all the way to the edges.) Roll cake back up (this time without the towel). Wrap cake roll in plastic wrap and refrigerate for at least 1 hour.
For the glaze:
Remove the plastic wrap from the cake and place on a cooling rack set over a sheet pan.
Using a medium microwaveable bowl, add chocolate chips and whipping cream. Microwave in 20 seconds intervals, stirring after each round, until mixture is smooth.
Let stand at room temperature for 5 minutes, or until mixture has thickened slightly but is still pourable.
Pour chocolate glaze evenly on top, spreading evenly over entire cake.
Refrigerate cake for 30 minutes to allow glaze to set before slicing.
Notes:
If you like mint, you could substitute mint extract for the vanilla extract in the filling
You can add sliced strawberries or raspberries on top of the filling for added flavor
Cooling time may very based on your climate. The times in this recipe are based on the South Florida climate.
Today’s bloganury prompt is all about the missing skill you wish you had. I haven’t participated bloganury yet, but with nothing else compelling to write here I am. The one missing skill I wish I had was singing. I cannot carry a tune to save my life and I love singing. In fact, I’m quite jealous of all the amazing singers in my life. This is also why I was in band and not choir.
So I was finally able to workout today. I’ve taken the past couple of days off because I jacked my knee up. Consequently, I substituted body weight exercises for the plyometric exercises. While I was able to get through the workout, my knee didn’t tolerate it very well. It’s swollen and a bit weak. I’m probably gonna need to wear a knee brace when I run and workout. Obviously, I have my fingers crossed hoping I can run tomorrow. If my knee doesn’t tolerate it, I’ll pivot to walking immediately.
Since the boys are back in school, it’s back to the status quo during the day. My door is always open to my sales assistant, who never judge me for my missing skill. Even if I’m singing Metallica poorly at the top of my lungs. They probably think I’m trying to speak their language. Nonetheless, thank god for dogs that love us unconditionally.
