Sourdough

After the holidays, I decided I wanted to keep refining my baking skills by adding sourdough to the mix. Consequently, I loaded up my Amazon cart with all the goodies and accouterments one would need to start their sourdough journey. Amazon has millions of options to help you here which can be overwhelming. I’ll walk you through the items I bought later in the post.

Baking with sourdough is a labor of love and patience. It can take a couple of weeks for your starter to get going and be strong enough to use for bread. Once I received all my goodies from Amazon, I got to work on my starters. I started with two starters in case I messed up one of them. The first one I started, I used a culture I had bought from Amazon. The second one I started, I used the recipe that came with the sourdough starter kit. As for the recipe, it couldn’t have been more simple as it was just flour and water.

Patience is a virtue I don’t have, so you can imagine how anxious I was to get baking. Once the starter had been established for a little over a week, I decided it was time to rumble. Consequently, I found a sourdough recipe in my Better Homes & Garden cookbook that was fairly straightforward. The first loaves turned out a bit stodgy but tasted good. I have now made the recipe three times with each attempt looking and tasty progressively better. They say that sourdough practice makes perfect and honestly my family loves all the fresh bread.

I did try Paul Hollywood’s sourdough baguette recipe a few weeks ago. Unfortunately, I got desperately ill between the first rise and the second rise. My hubby had to finish shaping the loaves and getting them set for their overnight rise. The following morning I did manage to get them in the oven looking semi-respectable.

If you’re looking to get started on a sourdough journey of your own, here are my must-haves:

Write about your first computer.

My first computer was a Dell desktop that I custom-built and bought for myself as a college freshman. I was so proud of my purchase. At the time, it was a cutting-edge computer. Now it would be an absolute dinosaur. At the moment, I’m rocking with a MacBook Pro having left my PC days just for my nine to five days.

AEP is Over!

AEP is over and I’m back to blogging. Since returning from Utah, it’s been work non-stop. I’ve literally been working 7 days a week since October 15th. This year’s AEP was productive and awesome, but I’m sure glad it’s over. I still have a lot to share from my Mighty Five adventure. Fortunately, we didn’t have reliable cell service or internet after leaving Zion. It honestly was an absolute gift.

Now I’m on a plane headed to Minny watching the Barbie movie with Goalielocks to catch up on some rest and relaxation. Well also he helping move my grandma into a new apartment at an absolutely beautiful building. She’ll have a nice view of the lake and when she needs it, she’ll have the assistance she needs. I’m so glad my mom and her siblings are getting her set now.

Zion National Park

We’ve spent the last two days exploring Zion National Park. This is the first national park we’re visiting this week. Tomorrow we’ll head to Bryce Canyon for our second park of the tour. Zion lived up to our expectations. We will be back. When we return, we’re going to complete the Narrows and Angel’s Landing hikes. We could not complete the Narrows today due to weather and the risk of flash flooding.

Before you go, here are some things to consider.

  • The busy season runs from April to Early October. And it is busy, so plan to get there early in the morning if you’re not staying in the park.
  • Buy the Interagency America the Beautiful pass. For $80 ($20 for seniors, free for military,) it gives you access to all of the National Parks.
  • The Zion National Park newspaper is a good resource for planning your visit.
  • Watch the weather carefully. The weather will impact your ability to complete certain hikes (like the Narrows) safely.
  • Get the right gear! You’ll need good hiking shoes and socks, ponchos, jackets, walking sticks, hats, sunglasses, a charger for your cell phone, lots of water, and snacks. Additionally, we brought bear spray, sunscreen, and bug spray
  • Prepare to be flexible. Your planned hikes may need to change depending on the weather conditions. Unfortunately, we were scheduled to do the Narrows today, but couldn’t due to the rain and the possibility of flash flooding.

Some of our favorite hikes:

  • Emerald Pools is a moderate hike that features three uniquely colored pools and a waterfall. Arrive early as it’s a popular hike.
  • The Watchman trail is a 3.3-mile moderate trail up to a beautiful viewpoint of the Towers of the Virgin, Lower Zion Canyon, and the town of Springdale. This was my personal favorite.
  • Riverside Walk is 2.2 miles and leads to the beginning of the Narrows. It is an easy, mostly paved hike. We got to the end of the Riverside walk and decided to do the beginning of the Narrows.
  • Kayenta Trail is a 2-mile moderate trail that connects the Grotto trail to the Emerald Pools trail.

Animals you may see while visiting Zion (not an exhaustive list):

  • Desert pronghorn sheep
  • Mule deer
  • North American rock squirrel
  • California condor
  • Gray fox
  • Coyote
  • Bobcats
  • Cougars

The park has beautiful visitor centers and numerous nice restroom facilities throughout the park. The shuttle system efficiently transports guests up and down the canyon to the various trailheads. If you’ve never been to Zion National Park, I’d recommend adding it to your list of places to visit.

What’s your #1 priority tomorrow?

My number one priority tomorrow is getting us safely to Bryce Canyon. We’re leaving Zion and heading to our second National Park of the trip. I’m a bit nervous as Bryce has gotten some snow over the last couple of days. Nevertheless, I can’t wait to see what Bryce and the surrounding area have to offer.

Frosting fail

Write about your most epic baking or cooking fail.

Today’s prompt is about my most epic baking fail. While I’ve had several, but if I were to pick my most recent one it would be a frosting fail. A couple of weekends ago I decided to make homemade toaster strudel. This was a part of my prednisone-fueled baking fest. I also baked an apple tart, kouign-amann, and short ribs that weekend. It’s no wonder that prednisone makes you gain weight.

The recipe was super simple and easy to make. Yet, I managed to royally screw up the frosting. I mixed everything together and it looked super clumpy. As an aside, frosting should never look like pastry dough. Since it looked so odd, I decided to taste it. It was then I realized I had accidentally grabbed flour instead of powdered sugar. Whoops! So if I may give one piece of advice, label ziplock bags when you put flour or sugar in them.

Another baking fail, and I swear it wasn’t my fault, was when I baked lasagna after Goalielocks’ graduation. My parents were staying with a few weeks, so I decided to make lasagna as it is always a crowd-pleaser. Everything was going well and I put it in the oven. When I checked on it thirty minutes into the baking time, I noticed it wasn’t cooking. That was a fun and expensive puzzle to solve! Ultimately, I was able to cook it in our bottom oven, which was thankfully still operational. Eventually, I got a new oven and I absolutely love it.

I think all bakers and cooks have failed in the kitchen. Often times the failure leads to laughs and second attempts. Some recipes take a lot more practice and refining than others. I, however, find it rewarding to finally master a more difficult bake. It should come as no surprise that I love watching the Great British Bake-off. I often end up baking items I’ve seen on the show. It’s a fun journey that connects me to my mom, my grandma, and all the bakers in my family.

What day is it?

What day is it? I woke up thinking it was Thursday, but my work computer must have thought it was Monday. Google Authenticator threw me into a death loop of back-up codes that lasted nearly an hour. During this time I couldn’t access anything on my laptop. I was completely sidelined for the first hour of the day. Unfortunately, I was not the only one locked out by Google’s duplicity. Fortunately, I was the first to get a hold of IT and got my issue resolved pretty quickly. Nonetheless, it cost me an hour of day, which does suck.

Last night we watched the Mayor’s team in its first scrimmage. As expected, his team dominated the Warriors. It was, however, a good opportunity for the squad to play together against someone else. He didn’t see a ton of ice, but did make the most of his opportunities. I’d love to see him get more ice time, but this is the reality of being a young guy on an older team. The best thing about my Mayor is he knows how to work. He’ll work harder than anywhere else to get to the next level.

I was thrilled that the scrimmage was run time. It started at 8:30 pm, so I was worried I’d fall asleep before the end of the first period. This was our first time watching a game on FloHockey. What a difference from LiveBarn! Livebarn is great because it gives you an opportunity to watch games you can’t attend, but the cameras are flimsy and the quality not great. The camera on FloHockey isn’t fixed and there is actual camera work being done. It’s not a fixed camera like on LiveBarn. I’m really excited to watch his games from our couch.

What’s your favorite word?

It starts with a f and ends with an uck. It’s a, as SpongeBob would say, a sentence enhancer that I use quite liberally. It’s a catch all for frustration, anger, insert negative emotion here. They say smart people swear a lot, so I’m just over here waiting for my Mensa invitation to come. While I wait, let’s enjoy a song.

Long Weekend

I made the most of my long weekend and I hope you did as well. It was our first Labor Day in well over a decade that hasn’t revolved around a hockey tournament. Admittedly, I felt a bit lost going into the weekend without the hectic run up to the season’s first tournament. I got my fill by following the Mayor’s coaches teams. Nevertheless, it was nice to be home and relaxing instead of running around Orlando.

Saturday we just chilled around the house. I was exhausted from a busy week and not sleeping well due to the prednisone. I did manage to bake a rustic French apple tart to take to the Kennedy’s for dessert. We enjoyed some yummy food courtesy of Sicilian Oven for dinner, followed by a nice swim in the pool. After our swim, we had dessert and played games with Ava. In what must be one of life’s greatest mysteries, the game Hi Ho Cherry-o that features cherry shaped fruit (down to the stem) is an apple picking game. Maybe I was just too sober to play it.

Sunday I made a rum cake and was going to make short ribs, but I was way too tired for it. The rum cake, however, was mighty tasty. It was my first time making a Bundt cake, which was fun. I was worried that cake was going to get to stuck, but it came out beautifully. The rum flavor was apparent, but not overpowering. I used rum I bought in the Turks and Caicos. The rum was beautifully fragrant as I cooked the syrup. I binged season 1 of White Lotus while I baked. We also spoke to all three boys, which was nice. All three are doing great.

Yesterday I binged the Flight Attendant season one while I worked on purging my closet. The preponderance of stuff in said closet, I no longer use. I still, however, am finding it difficult to part with my old work clothes. There could come a time when I need clothes for work that don’t come from Fabletics. I really enjoyed the Flight Attendant. It’s a well written and well acted show. We started season two last night as I baked the short ribs. Prior to starting dinner, I bought some new running shoes! After dinner, I could have used a whatchamacallits or some other chocolate to satisfy my sweet tooth.

What does your ideal home look like?

My ideal home is the one in which I currently live. The only difference is it would be super clean, cleaned by anyone other than me preferably, and full of doggos. I love our current house and wouldn’t want to move out anytime soon. Now that the boys have moved out, we can start fixing it up and making it ours.

Negative

I’m Covid negative and thrilled. I tested negative again this morning, so I was finally able to start the prednisone. I don’t know if it’s the coffee or prednisone, but I am feeling good. There’s no sign of roid rage yet, but Hubby should probably be on guard for that. Since I was Covid negative, I did go for a run on the treadmill and it was awesome. This was my first time running with Sherica, on apple fitness +, and it was an awesome workout. The playlist was straight fire.

So perhaps the negative test is what’s making me so positive today. It didn’t hurt that I had a brief chat, via text, with the Mayor’s billet mom. She’s just the sweetest. She shared that he’s adjusted really well to living away from home and the junior hockey life. Obviously, she wanted to know if we felt it was going well or if the Mayor had said anything. I shared that he’s only reached out when he needs something, which means he’s doing well. Of course, I let her know that all his feedback about the experience thus far has been positive. I’m really glad it’s going well because he can be ridiculous at times (iykyk.)

How are you feeling right now?

I’m feeling pretty good. I think it’s the steroids, but it’s Friday night and I have a long weekend in front of me. My son in Ft Myers is doing well. Jake got the position he wanted, which I’m super excited about. I’ll hold off saying more until I know more. Hopefully, the steroids will give me the energy to knock out a lot of things on my to do list. Tomorrow I’m going to return the bedding we bought the Mayor as he didn’t need it. I think I’ll use my Kohl’s cash to buy some artwork to decorate the soon to be guest rooms.

Challenging

Today’s run was challenging. Heck all of the runs this week have been challenging. First of all, I can’t remember the last time I ran outside. I think it may have been in time immemorial. Running outside is harder than running on the treadmill, but I also found it way more rewarding. Secondly, I’ve been in an autoimmune flare for over a week. This means everything is angry including my stomach and lungs. To be fair, my lungs have been angry since we were hanging out in the smoke filled Minnesota air in May.

5 day streak! Hit my goal

I’ve got an appointment on Wednesday with my doctor to make sure I’m in the right meds for the allergies and asthma. I do hate taking prednisone though because it keeps me up all night. It should, however, help fuel my workouts. Now I’m sure you’re wondering why the hell I’m working out through a flare. The answer is simply because it helps alleviate it. I cannot express how much better feel mentally and physically after working out. The key is to not over do it. Running on a track this week was the perfect way to get my workout in without being too far from home or the bathroom. I should also mention my Endo and PCP are both on board with my workout routines.

Tomorrow and Sunday will be full rest days, less some restorative yoga and Pilates. Since I ran hard all week, I’m going to enjoy a full 48 hour break from the cardio. I’ll be staying Kayla Itsines HIIT program Monday. I finished her beginner program last week. I started back at he beginning since I had taken quite a bit of time off and I don’t need to hurt myself. Her workouts are great! They will definitely make my muscles quiver. The morning after leg day is usually the worst.

How would you design the city of the future?

If I could design the city of future it would be walkable and full of coffee shops (including my personal favorite Dunkin Donuts) and dogs.

Midweek

It’s midweek, which while better than Monday it isn’t Friday. Nevertheless, the majority of the work week is now behind me. I shouldn’t complain too loudly since I can work from wherever I want. This week I’m working out of my parents house in Minny. My schedule is 8-5 est, which leads me plenty of time in the evenings to workout, visit folks or just be lazy.

Last night we went to Panino’s for dinner. Panino’s was one of my favorite restaurants before we moved to Florida. I was happy to see that the restaurant hasn’t lost its sparkle. The food, I had the chicken fajita panino, was very good. In fact, it my leftovers were the perfect stay to feed my face post run. The restaurant was a lot less busy than it used to be, but there are a lot more dining options now available in the area.

After dinner, I headed over to visit my friend Matt who I haven’t seen since before the pandemic. It was really nice to see him and reconnect after all these years. Honestly, it feels like all of us were just in high school yesterday. That feeling is definitely at odds with the fact all three of my boys have left the nest. It was the great day and a great night. The only thing missing was my adorable puppies and their excited wiggles when they see me.

Speaking of my empty nest, all three boys are doing well. The Mayor reached out looking for some protein powder and bio freeze. Apparently, they must be working him pretty hard in Ft Myers’s. Goalielocks started classes and volleyball practice this week, which are both going well. Jake and I are working on the logistics of our Mighty Five Adventure.

What motivates you?

My boys have always been a big source of motivation. I can hardly ask them to work towards becoming the best version of themselves if I’m not setting example. Speaking of motivated, I’m on a three day streak of running outside. Unfortunately, I’ll have to go back to running on the treadmill once back home due to the heat. I am, however, really enjoying running on the track.

Hot One

It’s a hot one out there. The heater turned on here in the Midwest, so today’s run was a good 30 degrees hotter, at least from the “feels like” temperature, than yesterday’s. In spite of the heat, I actually ran further today. Fortunately, it’s still a much cooler run that an outdoor run back home. I’m loving running on the track up at the middle school. It makes it quite simple to keep track of my distance. Plus, there are bathrooms right there, which makes it the perfect place to run after a morning of drinking coffee.

Making progress slowly (emphasis on slowly,) but surely

The Mayor had a great first day of training camp. It sounds like he was a true rink most of the day. He enjoyed both the on ice and off ice portions of training. Today brings more do the same for the Mayor and his teammates. He had tacos for dinner. I’m sure he’s now eating his billet family out of house and home. I can’t imagine how many pounds of meat they had to cook to feed the hockey boys.

I’m heading to Utah next month and am excitedly planning that trip. Jake and I decided to explore the Mighty Five. For the uninitiated the Mighty Five are the national parks found on Southern Utah including Zion, Bryce Canyon, Canyonlands, Canyon Reef and Arches. They’re all pretty remote, so we’ll be happily disappearing from society to explore the wilderness. In addition to the national park, there are several noteworthy national monuments (Grand Staircase Escalante) and state parks (Kodachrome Basin) I’m looking forward to exploring.

I’m hoping that ample preparation now will enhance the trip and remove some stress. To organize the trip more cogently, I’ve started using the Wanderlog travel planning app. This should help Jake and I lay out our trip and hikes in a very coherent manner. This is also make sure I can share with my Hubby/parents exactly where we’re hiking. I’ve also started to make sure we have the right equipment for all of these hikes. A lot of the hikes are pretty straightforward, but some are very long and all are remote.
